When the summer heat in Uttar Pradesh and Bihar gets strong, many families reach for a glass of sattu. But sattu is not only a summer drink. This roasted flour also goes into litti, parathas and laddoos. In this guide we explain what sattu powder is, the main types, how to use it every day, how to choose and store it, and how to buy sattu from Nath Mills in Tanda, Ambedkar Nagar.
What is sattu?
Sattu is a flour made from roasted grains or pulses. The grain is first roasted and then ground into a fine powder. Because it is already roasted, sattu powder does not need cooking for drinks. You can mix it straight into water.
Sattu has been part of everyday food in Bihar, Uttar Pradesh and Jharkhand for a very long time. It is traditionally carried on journeys and eaten on hot days, and it is also made during festivals such as Satuani (Mesh Sankranti).
Sattu and sattu powder: same thing?
Yes. People search for “sattu” and “sattu powder” for the same product. Sattu powder simply means the roasted flour in powder form, ready to mix.
Types of sattu
Sattu can be made from different grains. The most common types are:
- Chana sattu: made from roasted chana (Bengal gram). This is the type most people think of in Bihar.
- Jau ka sattu: made from roasted barley (jau). It has a nutty aroma.
- Multigrain sattu: a blend of roasted grains and pulses.
At Nath Mills we make two kinds of sattu at our mill in Rampur Kalan, Tanda:
- Diet Sattu, a roasted multigrain sattu. Its pack lists roasted chana, matar, jau and corn.
- Jau Ka Sattu, made from roasted barley.
Both are finely milled and packed with no added preservatives.
How to use sattu powder every day
Here are simple ways to use sattu, taken from the methods we share on our product pages.
Namkeen sattu drink
Mix 2–3 tablespoons of sattu in a glass of cold water. Add lemon juice, roasted jeera powder and black salt. Add chopped onion or mint if you like. Stir well and drink it fresh.
Meetha sattu sharbat
Mix sattu with cold water or milk, and sweeten it with jaggery or sugar. Many families prefer jaggery for the taste.
Litti and paratha filling
Mix sattu with mustard oil, ajwain, garlic, green chilli, lemon juice and salt. Use this masala to stuff litti or parathas. Chopped onion and coriander also go well in the filling. For the dough you can use wheat atta; read our whole wheat atta guide for tips on kneading.
Sattu laddoo
Bind sattu with ghee and powdered jaggery, then shape it into small laddoos. They keep well for a few days in an airtight box.
Other ideas
You can add a spoon of sattu to dough for parathas, use it to thicken a sabzi gravy, or mix it into a cheela batter along with Chana Besan.
How to choose good sattu
- Read the ingredients. Check which grains are in the pack so you know what you are buying.
- Check the dates. Look at the packed-on and best-before dates.
- Smell it. Good sattu has a pleasant roasted smell. A stale or musty smell means it is old.
- Feel the texture. It should be fine, dry and free-flowing, without damp lumps.
- Pick the right size. Sattu with no added preservatives is best used in a reasonable time.
How to store sattu powder
- Store in a cool, dry and hygienic place, away from direct sunlight.
- After opening, keep it in an airtight container.
- Use a dry spoon every time.
- Keep it away from the stove and steamy areas of the kitchen.
