Roti, paratha and puri are on most Indian plates every single day, and all of them start with one thing: whole wheat atta, or gehu ka atta as we say at home. This guide covers what whole wheat atta is, how to knead it well, which dishes to make with it, how much a family needs in a month, and where to buy gehu ka atta from a local chakki in Tanda, Uttar Pradesh.
What is whole wheat atta (gehu ka atta)?
Whole wheat atta is flour made by grinding wheat grains. In Hindi it is simply called gehu ka atta (गेहूं का आटा). It is different from maida, which is a refined white flour used mostly for bakery items and some snacks. For daily rotis, most Indian kitchens use atta.
At Nath Mills, our wheat atta is called Usha Bhog. It is chakki-milled at our mill in Rampur Kalan, Tanda, Ambedkar Nagar. The only ingredient is wheat (gehun), and it is packed with no added preservatives. If you want to know more about how chakki milling works and how to check freshness, read our chakki atta guide.
How to knead whole wheat atta for soft rotis
Good rotis depend more on the dough than on the tawa. Here is a simple method:
- Measure. For about 8–10 medium rotis, take 2 cups of atta. Add a pinch of salt if your family likes it.
- Add water slowly. Pour water a little at a time and mix with your fingers. Wheat flour takes in water slowly, so do not add it all at once.
- Knead well. Knead for 5–7 minutes until the dough is soft, smooth and does not stick to your hands.
- Rest the dough. Cover it and let it rest for 15–20 minutes. This step makes rolling easy and keeps rotis soft.
- Cook on a hot tawa. Roll even rotis, cook both sides on a hot tawa, then puff them on the flame.
Common kneading mistakes
- Too much water: the dough becomes sticky and rotis turn chewy. Add a spoon of dry atta and knead again.
- Too little water: the dough cracks at the edges while rolling. Wet your hands and knead some more.
- Skipping the rest: dough that has not rested springs back and is hard to roll thin.
- Keeping dough too long: use kneaded dough the same day, or keep it covered in the fridge and use it soon.
Dishes you can make with gehu ka atta
Whole wheat atta is the most flexible flour in an Indian kitchen. A few everyday ideas:
Rotis and chapatis
The everyday staple. Serve with dal, sabzi or curd.
Parathas
Plain, aloo, gobhi, mooli or methi parathas cooked with ghee make a filling breakfast. Use a slightly softer dough for stuffed parathas.
Puris
Knead a slightly stiffer dough with a little oil and salt, roll small circles and deep fry. Puris are a favourite for festivals and Sunday breakfast.
Aate ka halwa
Roast atta in ghee until it turns brown and fragrant, then add sugar or jaggery syrup and stir until it thickens. A simple sweet for pujas and winter evenings.
Multigrain rotis
Many families mix wheat atta with other flours for variety. You can mix Usha Bhog with our Jau Ka Atta or Makka Ka Atta. Barley and maize doughs are less stretchy than wheat dough, so adding wheat atta makes rolling easier.
How much atta does a family need?
This depends on how many people eat and how many rotis each person has. As a rough home example, if a family of four eats about 3–4 rotis each, twice a day, they may use close to 1 kg of atta a day. That works out to around 25–30 kg a month.
Use your own family’s habits to decide, and pick a pack size you can finish while the flour is fresh:
- 5 kg – good for small families, students and working couples.
- 10 kg – a common choice for a family of four.
- 25 kg – for large joint families, hostels, dhabas and small shops.
